Cooking Techniques with Impact
This module is broken into three parts, so you can build your understanding step by step. Each part follows the same rhythm: watch the video, complete the assessment, and refer to the Information Pack to explore the topic in more detail. When you’re ready, move on to the next part. Completing all three parts will take you right through the full module.

In this Module:
All dishes can really shine when prepared with the right cooking technique. You can bring out the hidden charms of different foods when you know how to best cook them, maximising the flavour, aroma, texture, and mouthfeel for your diners.
It's also important to know that different foods lend themselves to different techniques, which generally fall into two main groups: dry heat cooking and moist heat cooking. Understanding how and when to apply these is essential knowledge and will also help retain maximum nutritional value.
Getting this right also improves consistency, reduces waste, and creates meals that are more enjoyable for your residents to eat.
